Call for Experts – Development and Delivery of Training Modules for the African Gastronomy and Food Service Industry

Introduction

The African Organisation for Standardisation (ARSO), an intergovernmental body established by the African Union (AU) and UNECA, is implementing the “Harmonization of African Standards for the African Gastronomy and Food Service Industry Project” in collaboration with AFREXIMBANK.

To bridge existing compliance gaps and upskill the continent’s culinary and hospitality value chains, ARSO is seeking qualified experts and training institutions to develop technical training modules and deliver them across three regional masterclasses in 2026 under the theme: “The Food Establishment Masterclass: Integrating Infrastructure, Service Excellence, and Regulatory Rigour.”

Scope of Work & Target Modules

Selected trainers will be responsible for drafting technical curricula, creating presentation materials, and delivering sessions during a 3-day masterclass across three distinct African regions.

  • Module 1: Design and operation of food establishments
    • Focus: Infrastructure design, layout, workflow optimization, Good Hygiene Practices (GHP), basic HACCP, food handling, storage, and transportation.
  • Module 2: Service provisions in hospitality and gastronomic establishments
    • Focus: Operational excellence, quality assurance, customer satisfaction metrics, employee training, brand appreciation, and business sustainability.
  • Module 3: Food recipe standardization and quantity food production
    • Focus: Recipe formulation, portion quantitation, nutritional value proposition, economic considerations, and scaling for mass catering.
  • Module 4: Harmonised regulatory inspection and audit of eateries
    • Focus: Regulatory compliance, licensing requirements, food poisoning/illness incident handling, standardized eatery audits, and conformity assessment.

Required Trainer Profiles

ARSO intends to select experts aligned with specific industry pillars:

  • Trainer 1 (Module 1): Must have experience working with a Learning/Training Institution providing culinary, gastronomy, or foodservice-related courses.
  • Trainers 2 & 3 (Modules 2 & 3): Must have current or past professional experience in the hospitality, culinary, or food service sector with deep knowledge of recipe economics and enterprise profitability.
  • Trainer 4 (Module 4): Must be currently or previously associated with a national Regulatory Body overseeing the culinary, gastronomy, and food service industry.

Key Qualifications

  • Education: At least a Master’s degree or equivalent in Food Science, Hospitality Management, Nutrition, Public Health, Gastronomy, or a related discipline.
  • Experience: Minimum of five (5) years of professional experience in food safety, hospitality operations, or food standards development. Knowledge of ISO/IEC 17065 and the AfCFTA is highly advantageous.
  • Languages: Fluency in English and/or French.
